One more week until summer CSA is in full swing (see full schedule and pick up locations below!). We are having more and more flowers bloom so flower harvest is getting kick started for the season. We are harvesting lots of Ranunculus from the greenhouses which we know are a lot peoples favorite spring flowers. Ranunculus comes in more than 20 colors look out for many of these colors in the CSA bouquets.

In this weeks CSA box you will find a fun variety of fresh veggies. Green garlic and the mix of herbs will add a pop of flavor into any of your dishes. A fun addition this week are some rhubarb stocks that are great for desserts or in a salad.

Green Goddess Dressing

Ingredients

2 teaspoons anchovy paste or 2 to 4 canned anchovies

  • 1 small garlic clove, minced

  • 3/4 cup mayonnaise

  • 3/4 cup sour cream

  • 1/2 cup chopped parsley

  • 1/4 cup chopped tarragon

  • 3 tablespoons chopped chives

  • 1 1/2 cup spinach

  • 2 tablespoons lemon juice

  • Salt and black pepper to taste

Blend the ingredients together:

Put all of the ingredients in the bowl of a blender or food processor and blend or pulse until you get an evenly smooth dressing, about 30 to 45 seconds.

Enjoy on veggies, roasted meats, as a dip, or tossed in fresh greens.
