Winter CSA Week of December 6

CSA pick up is today, November 29th, at the farm until 6pm, at Genuine Ice Cream from 2-6pm, at Spire Climbing Main Gym from 4-8pm, and also delivered to Livingston and to Big Sky.

Reminder we will not have CSA on the week of Christmas — Wednesday 12/27. Otherwise pickup will be on Wednesdays as usual through the new year.

We still have a few turkeys and ham in our freezers plus cider to garnish your holiday tables!

Winter still evades us with no snow and unseasonable temperatures. We now turn towards longer winter projects while keeping up with the weekly tasks of harvesting, washing and packing produce. In the green house the veggies are thriving with the warmer days. Our bok choy this week is especially lush for December!

Bok choy is delish eaten on its own steamed, roasted or sautéd with sesame oil and soy sauce and is great addition to stir frys and rice dishes. Here is a recipe for the Korean dish Bibinbap with bok choy. Both delicious and versitilze, bibimbap is a filling winter feast. You can add or swap in additional vegetables (like leeks, kale, or even squash) and vegetarians can opt to substitute in tofu and extra eggs.

Ingredients

Step by step instructions can be found here: https://www.blueapron.com/recipes/korean-style-beef-with-sesame-bok-choy-marinated-carrots.

*If you don’t have all of the korean sauces on hand, a mix of soy sauce with ginger and garlic is also delicious.

In todays CSA you will also be receiving baby kale from the green house. Throw baby kale into salads to provide nutriental value and add a robust tangy flavor. Yummy when paired with a nice balsamic dressing!
