It has been another calm and peaceful week as winter (finally!) begins to fall on the farm. Festivities for the holiday season continue with wreath making, produce is tended to in greenhouses, and animals adjust to the snow that is beginning to fall. We are anxiously awaiting more snowfall so that the nordic ski trails around the farm can be groomed and put into use! As a reminder as you are getting ready for your own holiday preparations, we are still selling wreaths and apple cider here at the farm! Feel free to grab some when you stop in to get your CSA share this week :)
In your CSA boxes this week, you will find a variety of yummy and hearty greens and root veggies. One of these greens is microgreens! Micros are young vegetable sprouts (ours are usually pea shoot, sun shoot, cilantro, or a spicy mix) and have loads of health benefits. They contain many important vitamins and also contain high amounts of calcium, iron, and magnesium. Micros can easily be incorporated into everyday dishes in a variety of ways (see below). One of the root veggies you will find in your box this week is celeriac. Celeriac is simply the root from a celery plant, and is, therefore, commonly called celery root. Celeriac has a unique flavor that is similar to celery, but offers a sweet and peppery addition to your dish. It, too, can be prepared in a variety of ways (see recipe below).

You can also peel and roast celeriac in veggie dishes right alongside your other favorite root vegetables!
Wishing you a wonderful week filled with cooking good food and times spent with the ones you love :)
