We hope you were able to have a relaxing and joyful Thanksgiving with the ones you love! This week on the farm, holiday season preparations continue with the creating of wreaths that can be hung to add festivity to your home for the holidays. The wreaths are constructed with flowers that were grown here in our fields during the warmer months and have since been dried to preserve their shape and color. Wreaths are also made with greenery that has been harvested from trees around the farm. Each wreath is completely unique, and they each contain combinations of greenery and flowers that come in all colors and sizes. We have also been continuing to prepare greenhouse spaces for the colder months as we are still (anxiously!!) awaiting our first big snowfalls of the season! Wreaths are included in the Whole Farms CSA and also available for sale.
You CSA box this week has an “Asian-stye cuisine” theme! You will find root veggies, greens, and herbs that are perfect for a variety of stir-fry and noodle dishes (see recipes below). One of these root veggies is “sun choke,” also known as a Jerusalem Artichoke, wild sunflower, or earth apple. This plant is a sunflower that is native to North America. They produce beautiful, tall, yellow sunflowers, and the tuber or root growing below is edible. This root veggie can be used in a variety of ways, from eating it raw, pan frying it, or roasting it in the oven.
