Make sure to grab your monthly meat pack in the front room freezer. We were short on eggs again, so full share you only got a half dozen this week, but these warm temps should have up back on track soon!

if you are signed up for that Wow, what a winter wonderland we are living in this week! We hope you’ve been staying warm and getting the chance to play out in the powder! A reminder that CSA members get a pass to our nordic trails here at Rocky Creek included with your membership this year. Come enjoy the snow with us! Preparations for the spring and summer seasons are already underway here at the farm! Crop plans are being finalized, seeds are being ordered, and everyone is getting excited. The GVB side has already started seeding for some veggies, and we will begin seeding flowers on the Rocky Creek side in a matter of weeks! It should be an awesome season ahead.

In your CSA boxes this week, we’ve included more winter root veggies, along with some fresh greens and herbs from our greenhouses. You’ll also find some squash and onions, all of which could be combined into delicious soups, salads, or veggie roasts! Try out some of the recipes below, and let us know how you decide to use your veggies this week!

Farmer Cooking Hack:

If you need a new way to use your microgreens, look no further! I have started throwing extra micros into my smoothies in the morning. These serve the same purpose that kale or spinach would in a smoothie, but pack in even more nutrients to start your day. Microgreens contain a higher concentration of nutrients and vitamins than mature veggies. They are rich in antioxidants, Vitamin D, calcium, iron, and magnesium. I’ve noticed that I don’t taste a difference in flavor when I add micros vs. kale/spinach to my smoothies, and I know it’s a great way to get those extra nutrients and vitamins!
