We hope you are staying warm out there this week! This is the second week of the new season of our Whole Farm CSA share. As a reminder, pick-up days will be on Wednesdays during the winter season. We have it set out as Marketstyle from 12-6pm and we have someone in the market stand to help you find items or answer questions. It’s still not too late to sign up- we have one more spot left! We have on our website or at our market stand if you want to share the information with a friend. In celebration of Valentine’s Day this week, we have some specialty items/gifts on sale at our market stand. We have large and mini dried bouquets, mini heart-shaped dried flower wreaths, and gift cards for both our summer u-pick flowers and summer CSA flower shares. Stop in and grab something for your special someone! As it starts to warm up a bit on Thursday and Friday, come check out our freshly groomed nordic trails and enjoy this amazing snow we’ve gotten this week (a reminder that a nordic trails pass is included in your CSA share this year!). Can’t wait to see you on the trails and at the market stand this week!

In your CSA boxes this week, you will find a mix of fresh greens and hearty winter veggies to keep you going during this cold week! Try out some of the recipes below and let us know if you have any favorite ways to prepare these veggies when you stop in the market stand this week :) A reminder to 2024 CSA members to pick up your honey if you haven’t already!

Farmer cooking hack!

I love pickling radishes to use as a garnish/topping for almost any dish! Here’s the quick-pickle recipe I like the best. Give it a try!

Mix 1 cup of rice vinegar, 1 cup of sugar, 1 cup of water, and 1 tsp of salt and bring to a boil. Let cool to room temperature. Prepare your daikon radish by peeling and then slicing into thin rounds or spears. Pour the room temperature pickling liquid over the radishes in your jar and let sit in the fridge for at least 24 hours. The longer they sit, the more flavorful the pickled radishes will become! Feel free to customize your jars by adding things like chili flakes, peppercorns, and garlic cloves for extra flavor!
