It has been another exciting spring week here on the farm! The seeding for the season is almost fully complete - we finished seeding the squash and pumpkins for the fall just this week! With the colder weather happening, it has been a big week of cultivation out in the fields as we tend to seedlings that have recently been transplanted. We are anxiously awaiting the summer season when flowers and veggies will be abundant in these fields!

In your CSA boxes this week, you will find a variety of fun veggies from our greenhouses! One of these flavor-packed veggies is the scallion or green onion (they are actually the same thing!). At our farm, we plant scallions in a special way - we plant 12 seeds in each cell when we begin to grow the scallions in the greenhouse as starts. When the scallions are ready to go into the ground, we plant them all together so that when harvesting, we can pull them out as an already established bunch! In you boxes, you will also find the spring favorite for all your baking needs - rhubarb! Rhubarb is a truly spring seasonal vegetable as their growing season typically ends in June. While rhubarb is typically used in sweet desserts, it can also be used in savory dishes! Find a recipe for one below!
