Hi all, and happy Wednesday! We hope you’ve been having a great week of cooking good food and spending time outside as the winter season draws closer! Speaking of winter, many people often wonder what life on a farm looks like as the days get shorter, colder, and snowier. There are some differences from winter farming to summer farming, namely that we aren’t out in the fields planting, weeding, and harvesting everyday, but there are some similarities in the daily flows and tasks even as the seasons change. In the winter months, we are still harvesting and tending to veggies, we just do so in the greenhouses where things like microgreens and spinach are still thriving. We also work on cleaning and storing the root/hearty veggies that can withstand the winter months in our cold rooms. We still care for animals, just have to do so a bit more frequently so that eggs and water doesn’t freeze. We’re still working with flowers, but instead of them being fresh from the field, we create wreaths and bouquets will the dried flowers we harvested mid-summer. We’re still planting, but this looks like seeding and tending to the seedlings in the greenhouses so that they can be planted out in the field when summer comes. These months on a farm are good for the soul as it bring things back to basics and allows us to catch our breath a bit, but as always, we still look forward to the day that spring will come again.

Some reminders for this week:

  • Winter CSA has begun! We have market-style pick up at the farm from 12-6pm on Wednesdays, and boxes also get delivered out to Genuine Ice Cream, Spire Main Gym, Livingston and Big Sky. It’s not too late to sign up if you’d like to get delicious produce throughout the winter months! If you pickup at Genuine or Spire the boxes get picked up from the pickup location and brought back to the Farm for pickup from our Walk-In Cooler( unlike summer where the boxes are left to the drop off location to give away if not picked up). If you get Farm pickup, the Marketstyle is from 12-6 and then we pack up boxes and leave them in the cold room for at least a week. Often you can also get the previous weeks box. So make sure you are taking the boxes under the sign with the correct date!

  • We have Thanksgiving turkeys for sale! Come claim yours today if you signed up on our list!

  • We are selling season passes for our Nordic Ski trails at our market stand! Stop in if you’d like to purchase one or if you have questions about our trails.

  • We are sadly out of cider for the season and won’t be pressing any more apples. Thanks for a great Fall Festival!

Farmer Cooking Hack:

At this point in the season, I usually start to accumulate loads of root veggies (carrots, potatoes, parsnips, beets, etc.) and sometimes don’t know what to do with all of them! I’ve started doing a big veggie roast (toss the veggies with olive oil, salt, pepper, and garlic) at the beginning of the week, and then can add these veggies into the other dishes I’m making throughout the rest of the week! I’ve included some of my favorite uses for these roasted veggies below!

  • Add them to a burrito or scramble for breakfast

  • Use them in a quinoa or rice bowl with hummus or your favorite sauce

  • Mix them in a pot with stock and/or coconut milk and any other spices you like and blend for a simple soup

  • Eat them plain!!

Have a great week, and enjoy the sunshine today!
