Hi farm friends!

I am sad to tell you that this week is our last week of the Winter CSA. We hope you’ve been pleased with this season of southwest Montana veggies! It’s been so nice getting to know all of you on Wednesdays, and thank you for supporting our farm.

We still have a few Year Round Whole Farm (Veggies, Meat, Eggs, Flowers…..) Subscriptions left, if anyone wants more information contact Matt at matt@gallatinvalleybotanical.com. This starts next week!

We will be putting the Summer CSA on sale in the next few weeks so look for an email to come when that is available, 2nd week of June to start. Until then, you can still get our veggies and greens from the Market Stand on Wednesdays from 12-5pm. Or find us at the Bozeman Winter Farmers Market on select Saturday mornings. http://www.bozemanwintermarket.com.

This week we got our new litter of piglets in. It’s so exciting to see them grow over the year. They eat all of our veggie scraps & grain from Glen Visser in Harrison. It’s always such a joy to watch them devour every single bite. The pigs are an important part of our farm family & ecosystem. We let the farm camp kids name them in the summer and they come up with the most creative names like Techno Blade, Peewee the Cucumber, and Dodo.

As promised, here is a small collection of recipes from our CSA members and staff.

Mustard Greens with Apple Cider Dijon Dressing

Jerusalem Artichoke Soup

Ottolenghi's Spinach Salad

Egyptian Stuffed Cabbage

Parsnip Kimchi Fritters

Mille Feuille Nabe (Napa Cabbage & Pork Belly Stew)

& a simple salad that I just want to eat every day!

Gvb arugula

Evoo

Shaved parm

S and P

Lemon juice

Toasted pine nuts (sunflower seeds can work too)

Coutons if desired

Put arugula in bowl top with all items and toss with olive oil and lemon juice. Serve immediately. Gets limp if you let it set.
