Happy New Year from the Farm!
We have been hunkering down a bit with the cold weather and cooking with my family in town visiting. We are still maintaining the greenhouses, keeping Animals happy, and getting food out to you and our restaurants, but taking an easy pace. But I know next week Matt and I will be diving straight into the New Year with plans for the upcoming season.
I am ready for more greens in my diet, and we can all use some liver cleansing beets! Hopefully, a lot of you are juicing your beets on a regular basis! Roast all the beets in the box at once, and use some of them in this salad: https://www.foodandwine.com/recipes/spinach-salad-citrus-and-roasted-beets ( substitute shallots for the red onions!) and then I will leave the rest in the fridge to throw on other quick fresh salads made with my micros and kale. I also thought I was ready for a Napa Cabbage stir fry until I just discovered this recipe: https://californiagrown.org/recipes/a-napa-cabbage-recipe-that-will-melt-in-your-mouth/ . I haven’t made it, so I can’t vouch for it yet, but I’m trying it this week.
The greenhouses that are growing our winter greens are holding up well to this cold snap. The spinach houses are the only unheated hoop houses, and we just water those well, row cover the spinach and let it be until the warmer days return. The other salad greens Kale and Chard, and herbs are in houses that are heated just above freezing. You can see a little abnormal growth on the Cilantro due to the cold, but it is still tasty.
