To get prepared for Thanksgiving we are giving you a delicious heirloom Winter Luxury Pie Pumpkin this week. They are great for your holiday pie, or other baking you might be doing; breads, cookies, and soups.
Sunchokes, also known as Jerusalem Artichoke are the edible rhizomes of the native Helianthuis tuberosus. They are high in Potassium, Iron, and Fiber! They can be used in much the same way you would potatoes, They can be roasted, smashed and twice baked. They are high in inulin so make sure to cook them well for your digestive comfort! Sliced thinly and fried in sunflower oil is an option as is peeling and small dice sautéed into a risotto. (Our red rangers in the market stand make the best stock!)
Peppers still?? Tom has had these as a side project in one of our greenhouses. He has been babying them over the late summer, transplanting them into pots with farm soil and compost, regular additions of beneficial lacewings and aphidious wasps of some sort to keep the pests at bay, a custom enclosure to keep said beneficials on the peppers… Just a treat!
