Happy late April everyone! Ellis truly embodies my sentiment regarding our weather situation this past week… But! The tides are turning and we have some warm sunny days coming up and I know we are all ready for it.

So, with that in mind…. Broccolini!!!! So exciting and nice to have some new veggies to bring into the mix. I have been craving fresh, hydrating greens whenever the sun is out. One of my favorite warm weather sides is a bacon and broccolini salad. This weeks CSA offerings stand to make this salad even better! All you need is a few strips of bacon (you can pick some up here at the market stand or maybe you’ve got some from your monthly meat!), a little bit of mayo, some vinegar, a bit of red onion, dried fruit of your choice and some sunflower seeds. Take your bacon and cook in a skillet or cast iron until crispy, set aside on a paper towel. Make the dressing by adding some oil, mayo, vinegar, and honey in a large bowl and whisk it all together! Add the chopped red onion, sunflower seeds, dried fruit and bacon to the bowl then stir to combine! Liven things up even more by adding in some of your CSA scallions and micros! Keep it in your fridge for a bit to let the flavors soak in then it’s ready to roll.

You might even have some spinach left from last week (ha!) and a bit more this week! But toss some of that spinach in the freezer and you’ll be ready for my spring and summertime necessity: SMOOTHIES. For me, smoothies are the first thing that come to mind when the sun is out. I take whatever frozen fruit I can get my hands on (like the brick frozen bananas in the freezer that have been in there for perhaps the entire winter?) and toss in a cup or two of spinach, some fresh mint, one date, and some coconut water, oat milk, whole milk, really any liquid that can offer some flavor and that’s it! Liven things up even more by adding an avocado, some protein powder, chia seeds, flax seeds, you can’t really go wrong. I feel it moisturizing my body from the inside out!
