Hello Everyone! This week is an exciting week here at the farm. We are receiving our first batch of chicks on Thursday! Along with the chicks, we are officially out of carrots for CSA, signifying the beginning of a new farming season. Having empty walk-in coolers is always a strange feeling, after having it plum full all winter long. This is always a great time for looking thru last seasons photos, reflection, and stifling excitement about what’s to come.

On a side note, I have recently been fired up at the reapproved Willow Project. The Willow Project is a proposition to drill for oil in the arctic tundra of Alaska. This plan has been fought by environmentalists for years, using legal strategies and public protests. Courts had previously struck the plan down stating the project overlooked negative environmental impacts. With no amendments, it is the single largest proposed oil project using our public lands. This weeks box has two, first appearances of the year; radicchio and little gem lettuce heads. The lettuce heads are great chopped, rinsed and dressed in a homemade balsamic vinaigrette. The beautiful thing about homemade dressing is that you most likely already have what you need in the pantry! I typically do mustard, olive oil, balsamic vinegar, salt and pepper mixed well, and drizzled onto those fresh greens. I have also been craving my grandmothers spanakopita recipe, or spinach pie! Since she is most likely too busy sewing or winning at bridge, I was not able to get grandmas recipe in time; So hopefully this link does grandmas pie some justice!
