Winter 2022 CSA - Week of January 9th
Hi everyone!
As we enter the third to last week of Winter CSA I’ve found myself wondering: what’s everyone cooking? I feel like winter is the time for repeat recipes and comfort meals and I want to know -- if you’re willing to share -- yours! I’ll leave a receptacle and some sticky notes next to the sign off sheet for people to write down or drop recipes. You can also email them to me at srhu222@gmail.com. I know everyone is busy but I’m looking forward to hearing from you all and getting a peek inside people’s kitchens!

Audrey gave a great rundown of Sunchokes a few months back when they first popped up so check that out or try one of these ideas:
Sunchoke/parsnip or potato gratin with crispy shallots, I found this recipe that looks good as a base.
I had a friend in town recently who made a smashed sunchoke arugula salad. Simply slice sunchokes in half, drizzle with olive oil and season with salt and pepper and roast at 425. Roughly 15 mins in, take them out and smash with a flat bottomed glass. Return to oven and roast until crispy - they can also take a minute or two under the broiler. A smashed potato recipe will also give you a good idea of the process. We then tossed the sunchokes in with a ton of arugula and a lemon shallot vinaigrette. Easy, delicious, and very satisfying.
Mustard Greens: “The leafy greens of the mustard plant, they have a spicy, horseradish flavor and hearty texture. Brief cooking greatly reduces their pungency. They excel in vegetarian bean dishes or with pork or beef.” (Eating with the Seaons).
