Welcome to May at the farm!

The farm is bustling as our crew keeps growing - in the next couple weeks we’ll be welcoming more faces as we round out our veg and flower crews, and starting this Friday the Rocky Creek side will have lots of new faces when farm school starts up again! It’s a welcome blast of energy to get us through the end of the week.

In other news, we’re butchering our first batch of chickens today! We get started nice and early and try to get as many butchered and bagged before lunch, so stop by to pick up your CSA and an incredibly fresh chicken today. We get a new batch of baby chicks from Freedom Ranger Hatchery (Matt says that of all the hatcheries he’s tried, these are far and away the best) every three weeks, and we butcher once a month through the fall. So start prepping your chicken recipes! This recipe for Slow-Roasted Oregano Chicken sounds fantastic. Try swapping out the tomatoes for your turnips - they get even sweeter when roasted!

A few more CSA ideas for you this week:

  • Microgreens are always great added to a salad or sandwich, but this week try them as an omelet filling! Goat cheese or feta would be a great complement.

  • Turnip greens can be used similarly to other leafy greens and make for a satisfying substitute. I added some to one of my favorite soups last week (also a great use for your scallions) and they did not disappoint. Recipe here.

  • If you don’t get around to using all of your oregano this week, try drying it! You can do this by hanging it upside down (a rubber band and a tack will do the trick) or by sun-drying just the leaves by laying them flat on a towel. Then crush the leaves and store in an airtight container. While fresh oregano is often used as a garnish or towards the end of cooking, dried oregano can be used in larger quantities throughout the cooking process.
