Happy Wednesday vegetable lovers!

Welcome back to another week of spring CSA.  A quick reminder before we get into updates and recipes: we still have spots open for our Summer CSA! There’s nothing better in the summertime than having a box of fresh veggies and eggs waiting for you every week. This week’s box brings you lettuce mix, chard, pea shoots, thyme, radishes, hakurei turnips, and purple scallions. While looking for new ways to enjoy pea shoots, I came across this recipe for garlicky stir fried pea shoots. It’s quick and easy and I can’t recommend it enough! Your chard would do great here, too. Serve with some asian-inspired meat or noodles.

Our full share members are receiving purple scallions this week (and half share members can stop by the farm stand to grab a bunch!) and there are so many possibilities. Chop up the greens and saute in butter as a quick addition to some morning eggs. Slice the bulb in half and pan-char them to use as a toast-topper, or enjoy sliced raw on a sandwich. Or you could make scallion pancakes! Combine flour and water for the dough, brush with sesame oil for extra flavor and fry in a neutral oil, these are low-effort, high reward and kid-friendly. Serve with sliced radish and turnips and a soy-sauce ginger dipping sauce. I like this recipe.
