Gallatin Valley Botanical   Gallatin Valley Botanical

Since 2003, we have been growing specifically for restaurants and refining our operation by working directly with chefs, and getting feedback about our produce and presentation to provide a better product. We encourage chefs and their staff to come out to the field and see first hand how our produce is grown.

Over the course of a market season that begins in late May with spring greens and herbs and lasts into winter with microgreens, spinach, fingerling potatoes, winter squash, storage root crops, and shallots, we offer a diverse selection of vegetables, many of which are commercially unavailable. Our weekly produce offerings and field production levels generally peak from late July through early October.

For the Bozeman and Big Sky restaurants from early June through early November, we deliver twice weely, Tuesdays and Fridays. We strive to harvest and prep our produce so that there is as much useable product as possible, such as mint and basil tips, trimmed baby carrots, and well dried greens. Our fresh and clean produce gives a prettier presentation, better taste, longer shelf life, & less waste.  We offer a steady supply of the most popular salad greens, microgreens year round, baby vegetables, various tomatoes, and many, many other items.  If there is anything you would like to see on a regular basis, let us know, we can tailor our production levels to your needs with adequate advance notice.
